Course Description Role of water in food matrices. Its thermodynamic and transport properties.. Effect of water on the rheological properties of foods. Definition and physical meaning of the glass transition. Binary (water- polymer) state diagrams to introduce the cryostabilization of foods. Consequences of the thermodynamic incompatibility between polymer components of foods : formation of dispersed phases. Stability of food colloids. Phase transitions and polymorphism in fats. Supercritical fluids and their application in food technology. Thermodynamic properties of SCF CO2; extraction from solid and liquid matrices. Experimental methods (DSC, Termogravimetry, Texture and Image Analysis) to characterize food systems and simulate treatments durino the production processes.
